Ham and Egg Breakfast Muffins

So I am still on puree but I am home so made my kids these for breakfast this morning.  Super simple, they all enjoyed them and they would also freeze well for re-heating. 

Ingredients:

12 slices of ham (I just got lunch meat)

1/4 cup Cheese

7 Eggs

Salt/Pepper

Spay each tin, with non cook cooking spray, Simple place one piece of ham in each muffin tin, I folded a little to fit, if you want more protein you could easily put to slices.  Beat 7 eggs, added a little salt/pepper and about 1/4 cup of shredded cheese.  Bake 400 degrees for approx 15 min

So many other things that you could add to these as well, onion, tomato, feta, spinach, sausage etc.

For each Muffin my calculations show:

29.6 Calories

3.16g Protein

.75g Carbs
